Jerk paste was originally used to coat whole pigs which were spit roasted in the market place in Boston, Jamaica for local people.
The secret recipe was handed down from father to son for generations and these sons became known as ‘The Jerk Men of Boston’.
Louie is a descendant of these men and his paste is delicious on all kinds of meat and fish, especially pork and chicken.
It contains no animal products or artificial additives and is perfectly suitable for vegetarian and vegan dishes.
